Easy camping recipes for cooking outdoors.

Tired of Hot dogs and hamburgers? We've got some great tasting recipes that are actually easier to make than Hot Dogs.

Many of these recipes utilize a Dutch Oven.What is a Dutch Oven?

A cast iron pot used for baking, roasting,frying, or just about anything.

Dutch oven cooking is not an exact science. adjust the ingredients to accommodate you tastes and the size of the Dutch Oven. When cooking with a Dutch Oven you need to use charcoal. Not all charcoal is created equal. I've had cheap charcoal not burn evenly causing big problem. Don't be cheap when buy the coal and keep them fresh.

Each charcoal is approx 35 degrees when perfect.

To cook at 350 degrees you would need approx 10-12 coals on the bottom and 10-12 on the lid. As I said this is not an exact science. I've had as many as 15 on the top and 15 on the bottom.

The hardest part of Dutch Oven Cooking is keeping the coals at their prime. About every ten minutes add some new hot coals to keep the temperature at 350

A 10-12 inch Dutch Oven can feed 6-8 hungry people


Dutch Oven Enchilada Casserole

Ingredients1-2 cans - enchilada sauce

1 - pkg - Tortillas corn or flour

1-2 cans - refried beans

1- bag - shredded cheese

1- can - meat - chicken or beef (we don't use meat in ours)

Pour a small amount of enchilada sauce into the bottom of the pot. Place a layer of tortillas, beans and sauce and cheese. Then another layer of tortillas, meat sauce and cheese. Layer until you have enough food for your group. Top with sauce, cheese, olives etc...

Place the lid on the oven

Carefully place the dutch oven on the coals

Approx. 350 degrees for 35-45 minutes

Feeds 6-8 hungry peopleSpoon out to serve - Careful the cast iron retains the heat for a long time.


Foil wrapped Glazed Salmon - Yummy!

1 large fillet of Salmon

brown sugar

mustard - plain or spicy

Place 2 pieces of foil flat

lay the salmon on it

spread a light coating of mustard across the top

spread a heavy coat of brown sugar across the top

layer 2 pieces of foil on top of the Salmon

fold and crimp all 4 sides of the foil (no leaks)

Place on BBQ or Grill at med heat for 10 minutes then flip the foil wrapped fish overcook for another 10-15 minutes and until the foil looks like a balloon.Flip the fish again for a couple of minutes

Carefully cut foil (it's hot) and enjoy the Salmon!


Chicken and Rice with carrots

Ingredients2 - pkgs - Flavored rice

1-2 cans - Chicken or fresh (but that's hard to keep when camping)

3-4 cups - Frozen or fresh, cut carrots - or any vegetable

Margarine

Follow the directions on the rice packages

drain and add the chicken

add vegetables and stir

Place the lid on the oven

Carefully place the dutch oven on the coals

Approx. 350 degrees for 35-45 minutes

Feeds 4-6 hungry people

Spoon out to serve - Careful the cast iron retains the heat for a long time.


Breakfast Burritos


Ramin, Ham and Vegetables

Okay - this may sound strange but it's a quick easy meal and great when it's cold outside

1 - pkg of dried flavored ramin per person

1/2 cup of vegetables per person

enough sandwich meat cut into pieces for each person or canned - drained chicken

Add all the ingredients to boiling hot water for a minute or twoWith this soup add a loaf of French Bread on the side and you've got a fast easy filling dinner.


Dutch Oven Mom's Pot Roast with carrots and Rigatoni

1 - Chuck Roast

2-3 - cans Tomato sauce

1/4 cup dried onions

pinch oregano

1 - pkg Rigatoni

6 - 8 Carrots

Feeds 4-6

Place all the ingredients in the Dutch Oven except the carrots and Rigatoni - Cook a 350 for about 1 hour add the carrots continue cooking for 30 -50 minutes until done. Boil the Rigatoni as directed and drain. Remove the Roast and carrots for serving and add the Rigatoni to the sauce and stir.

Dutch Oven Tuna Casserole

Ingredients2-3 cans - drained tuna

2 - cans - Cream of Celery soup

1 - family sized bag of plain potatoe chips

water

With you hand mix together the tuna, soup, and chips. You will need to add small amounts of water until the mixture is is soft, yet still firm.

Place the lid on the oven

Carefully place the dutch oven on the coals

Approx. 350 degrees for 35-45 minutes

Feeds 4-6 hungry people

Spoon out to serve -

Careful the cast iron retains the heat for a long time.
